Is there anyway I can view edits in progress on a document I am sharing with another user, or do I need to open the document again to see all the edits and changes?

That is correct. There is unfortunately no "live view" of edits as they take place. You have to wait for the other person to save the document and then reopen it.

This is unfrotunate and a little limiting, but we are working to change that.
